- Green mango: 1kg
- Salt, sugar and paprika (Chili powder should buy brand name, place of production and clear expiry date to ensure quality).
Step 1: Prepare mango
Peel the mango, wash it and cut it into pieces. Then put the mango in a bowl soaked with diluted salt water (use boiled water to cool it). Soaking time is about 10-15 minutes, take out, rinse with clean water, drain.
Step 2: Toss mango with sugar
Put the mango in a bowl, add 7 tablespoons of white sugar and mix well so that the sugar covers all the mango pieces. Leave for about 1 hour for the mango to melt, this is also the time when the sugar dissolves and soaks into the mango. Taste to test the sweetness, if you like it a lot sweeter, you can add more sugar according to your liking as long as it suits your taste.
Step 3: Make mango pickles
When the mango has melted, add 1 tablespoon of chili powder and 1 teaspoon of fine salt to the bowl, continue to stir well. If you like it more spicy, you can add 1 more teaspoon of chili powder. Don’t give more, too spicy is not good for your stomach. Let the spices infuse for about 15-30 minutes, the mango pickle is ready to eat.
